Bertolli was founded in 1865 by Francesco and Caterina Bertolli in Lucca, Tuscany, Italy, starting as a small trading shop selling wine, cheese, and olive oil before expanding into international export.

Over the decades, Bertolli grew into one of the world's most recognized Italian food brand names. The brand's product lines eventually diverged under different ownerships: the Bertolli pasta sauces and frozen meals are owned by different entities (such as Mizkan and Conagra Brands), while the olive oil business was acquired by the multinational Spanish olive oil processor Deoleo, S.A. (formerly SOS Corporación Alimentaria).

Bertolli olive oils are blended and bottled primarily across Mediterranean facilities (especially in Spain and Italy) using olives sourced from multiple countries, including Spain, Italy, Greece, Portugal, and Tunisia.
